Domaine Achillée 'Chrysalide' Alsace, 2021 Wine and a touch of tantalizingThis wine is made from 50% Riesling, 23% Gewrztraminer, 15% Pinot Blanc, and 12% Pinot Noir. Each of the grapes is harvested on the same day and goes through an 8 hour maceration before being pressed. The wine is aromatically herbaceous, and full of ripe citrus, tangerine, and hints of ginger on the palate. Pair it with grilled octopus over boiled potatoes, seasoned with paprika and good olive oil.
